Kheer, its a symbol about celebrations ,comfort and home. Kheer is a traditional Pakistani deserts made with rice ,milk and sugar.
Ingredients:
- 1 cup basmati rice
- 4 cups milk (full fat or low fat)
- 1/4 cup sugar (or to taste)
- 1/4 teaspoons cardamom powder
- 1/4 teaspoon saffron threads
- 1 tablespoon ghee or butter
- Chopped nuts or dried fruits for garnish (optional)
- Rinse and soak the rice: Rinse the rice and soak in water for 30 minutes.
- Boil the Milk: In a large saucepan ,boil boil the milk over medium heat until it start to simmer.
- Add rice and cook: Add the soak rice to the milk and cook ,stirring occasionally ,until the rice is tender and the milk has thickened (about 20-25 minutes).
- Add sugar and flavoring : Add the sugar ,cardamom powder, and saffron threads .Still well to combine.
- Simmer and thicker: Continue to simmer the kheer over low heat ,stirring occasionally ,until it has thickened to your liking.
- Add ghee or butter :Stir in the ghee or butter to give the kheer a rich flavor.
- Serve: Serve the kheer warm or chilled ,garnished with chopped nuts or dried fruits if desired.
- Use short grain rice or basmati rice for the best results.
- Adjust the amount of sugar to your taste
- Add a pinch of salt to balance the sweetness
- Experiment with different flavorings like cinnamon, nutmeg or rose water.
- Coconut Milk Kheer
- Replace diary milk with coconut milk.
- Use coconut sugar instead of refined sugar.
- Add the jaggery at the end to prevent curdling

- Add all ingredients except sugar and nuts to the sugar
- Pressure cook on poridge mood (20 minutes)
- After releasing pressure ,stir in suagr and saute for a few minutes.
