Kheer Recipe.

Information:
Kheer, its a symbol about celebrations ,comfort and home. Kheer is a traditional Pakistani deserts made with rice ,milk and sugar.
Ingredients:

  • 1 cup basmati rice
  • 4 cups milk (full fat or low fat)
  • 1/4 cup sugar (or to taste)
  • 1/4 teaspoons cardamom powder
  • 1/4 teaspoon saffron threads
  • 1 tablespoon ghee or butter
  • Chopped nuts or dried fruits for garnish (optional)
Instructions:
  1. Rinse and soak the rice: Rinse the rice and soak in water for 30 minutes.
  2. Boil the Milk: In a large saucepan ,boil boil the milk over medium heat until it start to simmer.
  3. Add rice and cook: Add the soak rice to the milk and cook ,stirring occasionally ,until the rice is tender and the milk has thickened (about 20-25 minutes).
  4. Add sugar and flavoring : Add the sugar ,cardamom powder, and saffron threads .Still well to combine.
  5. Simmer and thicker: Continue to simmer the kheer over low heat ,stirring occasionally ,until it has thickened to your liking.
  6. Add ghee or butter :Stir in the ghee or butter to give the kheer a rich flavor.
  7. Serve: Serve the kheer warm or chilled ,garnished with chopped nuts or dried fruits if desired.


Tips:
  • Use short grain rice or basmati rice for the best results.
  • Adjust the amount of sugar to your taste 
  • Add a pinch of salt to balance the sweetness
  • Experiment with different flavorings like cinnamon, nutmeg or rose water.
VARIATIONS:
  1. Coconut Milk Kheer
  2. Replace diary milk with coconut milk.
  • Use coconut sugar instead of refined sugar.
  • Add the jaggery at the end to prevent curdling

.2:Instant Pot Kheer:
  • Add all ingredients except sugar and nuts to the sugar
  • Pressure cook on poridge mood (20 minutes)
  • After releasing pressure ,stir in suagr and saute for a few minutes.
